School lunches made EASY!

Meat Balls

I am always looking for recipes for mums who have kids that are gluten free or dairy free or in a nut free school. Let’s face it, most gluten free bread doesn’t really entice kids when made into sandwiches! These meat balls are a winner, they are high in protein, contain vegies, legumes, iron and best of all  fit my boys criteria of being quick to eat so they can race for the playground as quickly as possible!

This recipe is VERY adaptable – you can spice it up or down and kids still seem to love it! Best of all it is baked in the oven and not fried!

500g organic mince meat – Woolworths now has a Macro brand that has organic mince!

1 onion

1 carrot

1 bunch of parsely

1 tbs soy sauce/ tamari

1 can of  well drained, organic cannellini beans

1 egg

1tsp dried oregano

1/2 cup dried gluten free bread crumbs (optional – if you don’t have them it still works!)

Preheat oven to 180 degree C.

Finely grate onion, carrot and chop parsley(or put in thermomix  or blender and whizz up).

Add Cannellini beans and whizz up to  small chunky pieces

Add all other ingredients

Shape into balls or patties

Place on baking tray lined with baking paper.

Bake for 20 mins, then flip over and cook on other side for 5 mins or until cooked through.

Allow to cool and then store in container in fridge.

In the morning pop into  a container for school lunch.  I generally send it with some cherry tomatoes,  carrot sticks, capsicum and cucumber for a quick, healthy lunch.

  • For a variation in  flavour you can try adding chilli powder if your kids like spice, garlic, fresh chives, coriander, parsley etc!
  • If you don’t have cannelli beans and want a lighter meat ball you can add 1/2 cup of wholemeal bread crumbs – gluten free bread works great for breadcrumbs!
