Coconut Rough

A super easy,  healthy treat for anyone who LOVES coconut!

 

 

Due to all of the confusion we hear about coconut oil, we have put together some information that may take some of the mystery out of understanding saturated fats.  If you are interested in the health benefits of coconut oil have a read of our blog on coconut oil in our News and Information section. If you just feel like a delicious, healthy treat – start cooking!

 

Ingredients

 

2 cups desiccated coconut

1 heaped tablespoon cacao/cocoa/carob

10 medjool dates, seeds removed

1 tablespoons coconut oil

Place all of the ingredients into your blender or food processor. Blend until well combined, this may take a little while, note if you use a thermomix be careful not to blend too much as it will warm the mixture and the fats will separate out, if that happens it is easyto fix by just sprinkling additional coconut on top of the slice.  Press the mixture into a tin lined with baking paper, place the mixture into the freezer to set, slice and enjoy!  Top with coconut if you desire.
