Super Yummy, Easy to make Nut Loaf


My eldest son is having a sleepover tonight so I saw it as a great opportunity to  try a new dish out on his friend!

My criteria for cooking is simple – it has to be healthy and it has to be QUICK!  As a working mum of 2 very active boys I just don’t have time to spend hours in the kitchen. So I decided to try and whip up a quick, healthy nut loaf.

I just got the verdict – apparently the BEST sleep over meal yet!! So I decided I should share this recipe as it is a protein packed, healthy meal which is EASY to whip together and DELICIOUS!



1 large onion

300g  mushrooms

30g olive oil

2 garlic cloves, peeled

200g raw almonds

200g raw brazil nuts

125g cheddar cheese grated

25g parmesan cheese grated

1  egg

2 tablespoons chives

80g cooked brown rice or wholemeal bread crumbs


Preheat oven to 200 degrees Celsius.

Dice onions and garlic and saute in oil until soft, add finely chopped mushrooms and saute for 4 mins. (This can all be done in the thermomix!)

Place nuts in blender and blend to a coarse meal.

Add mushrooms, garlic, onions, rice, chives  and grated cheese.  Blend until just combined.

Add egg and salt and pepper to taste, blend until just combined.

Pour mixture into paper lined loaf tin. Bake for 45 – 60 mins until firm.

Leave in tin for 5 minutes and then turn onto plate.

Serve with a big green salad, some baked sweet potato and top with a quick tomato, onion, garlic homemade sauce.


PS  My son had it for lunch the next day and still loved it!
