I am always looking for the perfect snack for my kids, something easy to pop into a container that is delicious and nutritious!  One of my lovely patients gave me this recipe, and I have to confess we ate the first lot so fast I had to make a second batch the same day! These balls are super yummy and portable!

Figs are a great source of calcium, one that many people are unaware of, they are also a very alkaline food, so the calcium is very easily utilised by the body. Almonds are also a great source of calcium, as well as a great source of  healthy fats and protein.  The citrus addition – the lime or lemon adds alkalinity and the perfect ZING!  The cinnamon is wonderful for helping stabilise blood sugars. Due to the high calcium content they are great for our bones and so the combination is perfect for nourishing both kids and adults. Best of all they taste DELICIOUS!

Ingredients

8 dried figs

150g raw almonds

zest of one lime or lemon

juice of 1/2 lime or lemon

1 tsp ground cinnamon

1/3 cup (80ml) water

1/2 vanilla bean scraped out

coconut for rolling the balls in

Grind all the ingredients (except the coconut) well in a food processor or thermomix. Roll into balls and then roll through the coconut!  Store in the fridge!  ENJOY!
