The Best Ginger Cookies Ever!

Healthy Ginger Biscuits


I have been experimenting trying to find the yummiest, healthiest, protein rich ginger cookies ever. I can’t tell you this is the final version because I tweak recipes every time I cook, but this is the version my husband and boys are gobbling up faster than I can bake at the moment!

A good recipe in my book is one that tastes great, is full of flavour, adaptable and most importantly nourishing. These Ginger cookies tick all of those boxes. They have nuts, seeds and egg for protein and nourishment and heaps of ground ginger for flavour.  I will keep you all posted  as I try to make them using only seeds (not the nuts) for mums faced with  kids with allergies or nut free schools. So the magical recipe is:

Protein Ginger Cookies

150g  raw cashews

100g raw sunflower seeds

5 tsp ground ginger

1/2 cup of honey

1 egg

1 cup of plain flour (ideally either wholemeal, spelt or gluten free)

2 tsp baking powder

40g butter or  solid coconut oil


Preheat the oven to 160 Celsius

Grind the nuts, seeds and ginger in the blender till fine, or in a thermomix on 10 for about 10 seconds

Add all of the rest of the ingredients.  Process until well mixed.

Put dollops on lined baking tray.  Bake in oven for approx 40 mins – time will vary depending on the size of your blobs! Cool on an airing rack.

If you are a crispy gingernut cookie fan leave them in longer, if you like them softer pull them out earlier, it doesn’t seem to matter in my family – they are devoured either way!  ENJOY!
