Broccoli and Cannelloni Soup


  •  1 Litre veg stock, preferable organic or home made.
  • 2 big heads of broccoli
  • 1 onion
  • 3 cloves garlic
  • 100gm cannelloni beans
  • Pepper to taste


  • Fetta
  • Lemons – juice and zest
  • Fresh basil



  1. Sautee onion and garlic till soft then  add vegetable stock and bring to a simmer.
  2. Add roughly chopped broccoli, cover and simmer for 20 minutes. Add cannelloni beans and blend all together.
  3. For each serve, add 2 tbsp crumbled fetta, 1 tsp lemon juice and zest and 5 torn basil leaves.
  4. Finish off with black pepper and a drizzle of extra virgin olive oil.
