Banana Birthday Cake

Makes 8-10 good slices


  • 200g self raising wholemeal flour
  • 1 tsp mixed spice
  • 100g butter
  • 150g sun-dried raisins
  • 450g banana
  • 2 organic eggs (beaten)


  1. Pre-heat oven to 180 C. Mix flour and spice in bowl. Rub in the butter and stir in the raisins. In a separate bowl
  2.  mash the banana and add the egg. Fold into the flour mixture and place into a greased rectangular loaf tin.
  3. Turn the oven down to 160 C and cook on the middle shelf for 1 hour. Poke with skewer to see if it is cooked
  4. completely, leave in oven for further time if necessary.
